- Add ice, then add rum and club soda into glass
- Stir to mix.
- Garnish with a mango slice and mint

While lighthouse technology has evolved over time, lighthouses were once widely used to mark dangerous reefs, shorelines, or harbors. Today, we imagine how a lighthouse’s beacon of light offered hope to those seeking land in the midst of stormy seas and dark nights. One of our favorite lighthouses is located on Sanibel Island just down the way from us here in Cape Coral, FL. Where is your favorite lighthouse located?

August 24th – National Waffel Day
While no one really knows who invented National Waffle Day, it is known that it is celebrated on August 24th because that is when Cornelius Swartwout patented his stove-top waffle iron in 1869.🧇

Recipe Time!
Blueberry French Toast w/ White Chocolate Whipped Cream Cheese
Here’s a delicious recipe to create your own Wicked Dolphin Blueberry French Toast:
Ingredients for Cream Cheese:
1/2 Cup White chocolate melted
1 TBSP Heavy cream
4 oz Cream Cheese
Melt the white chocolate, add the heavy cream and cream cheese. Mix until smooth. Set aside
Ingredients for Blueberry Topping:
2 Cups blueberries
1/2 Cup Wicked Dolphin Coconut Rum
5 Drops of coconut concentrate
1/2 Cup Coconut sugar
1 TBSP of cornstarch
1/2 Cup of water
1 TSP Lemon zest
Add the rum to a stock pot, turn the heat to medium, and reduce by half. Add the blueberries and concentrate. Mash 1/2 of the blueberries up. In a bowl mix the water, sugar, and cornstarch and add to the pot. Keep staring. Once it thickens, remove from heat and stir in lemon zest.
Ingredients for French Toast:
1 Egg
1 Cup heavy cream
1 TSP Vanilla
1TBSP coconut sugar
Bread
1-2 TBSP of unsalted butter
In a bowl, mix all of the ingredients together. Dip the bread into the mixture. Add 1 TBSP butter to the skillet over med/low heat and brown each side of the French Toast. Approx 3 minutes per side. For serving, top with blueberry and serve with some of the white chocolate cream cheese mixture. Enjoy!
